Wines that are produced naturally utilising this organic process of nature allows the wines to age gracefully. This is Manor Estate’s formula to creating the highest quality of handcrafted aged wine. Manor Estate’s Cabernet Sauvignon is then transferred into French oak barrels where it remains for the secondary fermentation and many years to come avoiding the use of any artificial chemicals so our Cabernet Sauvignon is as organically produced as possible.
Tasting Note:
This exceptional wine displays a soft rich plumy character as you would expect from a matured Cabernet Sauvignon wine vintage produced from the McLaren Vale Region. That special occasion deserves a special wine. A wine that just mellows with the thoughts of a memorable night, where the rich dark wine viscosities and brilliant berry tastes flicker on your taste buds. Reminiscent of a roaring fire’s warmth fusing with your senses, or the soft and gently smoothing lingering sweet after taste of that last sip, a tantalising memory of that deep black-current and peppery plum wine with spicy rich mouth-watering aromas. This is a wine that is both uplifting dynamic and yet displays the soft oak undertones characteristically a signature of the region.
It is a wine to be savoured immediately and or cellared as the tannins are mature enough giving the wine enough structure to age or enjoy on that special occasion without leaving the palate too dry.

A wine like this needs to be paired with richer more intense foods – delicate dishes would be overwhelmed. Meats like lamb and steak naturally work with this because the meats are high in fatty proteins which coat your mouth. The high levels of tannin in Cabernet bind with the proteins of the meat and clear your palate making your mouth ready for the next bite. Pairing with heavier more complex dishes and sauces and incorporating salt, acid or fruit flavours will enhance this wine.
