Manor Estate Wines has developed a primary technique in the beginning stages of the production of our White wines to enable the wine to age with grace. Our growers for White Wines are located in Lobethal a region in the Adelaide Hills higher in latitude and incorporating more acidic soil types then in the McLaren Vale region. This produces fruit containing less sugar ideal for our aged white wines. The conditions are also cooler, producing high quality fruit for white wine production. Again, the utilisation of a specific “secret” French Yeast combined with enhanced cooling during fermentation produces an crisp clear unwooded delicate wine.
