In the quest for a unique aged Red Wine, our point of difference relies on choosing the best fruit at the best time and keying nature’s naturally timed fermentation processes to achieve the best end result. Wines that are produced naturally utilising this organic process of nature allows the wines to age gracefully. This is Manor Estate’s formula to creating the highest quality of wine.
We pick grapes in the cool of the night then refrigerate and allow fermentation of the fresh fruit for 8-10 days extracting as much tannin as possible through a plunging process where all the ingredients in the whole grape are allowed to absorb in the developing wine. We compliment this natural process with our “secret” imported French yeast developed over centuries in France. This produces the unique style wine we aim for. The wine is then transferred into French oak barrels where it remains for the secondary fermentation process.
Many other producers that produce wines and place them for consumption earlier than 4-5 years can only do so by utilizing artificial stimulants to turbo the wine process. Early vintages produced this way haven’t the richness and full body natural fullness as wines aged naturally. The use of our exclusive imported French Yeast to activate fermentation and limited Sulphur mimics an organic process that enhances tannins to produce rich colours and a full body consistency.
In production we settle the developing wine naturally using racking off to barrels for secondary fermentation to avoid the use of any artificial chemicals so our wine is as organically produced as possible. During the wines holdback period we diligently monitor wines bimonthly for significant parameters due to the evaporation of two litres of wine every two months and the changing developing nature of the wine.
